Spaghetti squash is a great alternative to pasta. It was an experiment that I am quite happy with:}
First cut the squash in half and scoop out the seeds. Then place face down on backing dish- 350 for 30 min.

Then cut up your veggies I used:
1. 4 cloves of Garlic
2. Half red onion
3. Half red bell pepper
4. A few grape tomatoes
5. One bunch of maitake mushrooms
6. Handful of baby spinach

Lightly cook the garlic and onion in cooking wine and shoyu. Then add the other veggies, spinach last.
Lastly scoop out the squash, which separates like spaghetti, and top with veggies. This dish could be substituted for a hearty pasta dish. It is very filling. Also add any veggies you would like:}
