Savory Crepes

Raw Crepes:}

Dinner last night! This recipe is from ‘Everyday Raw’ by Matthew Kenny. It was good and filling. I could only have one. It feels good to have an all raw dinner. I never feel stuffed or weighed down. I feel light and satisfied. In the background are the eggplant sausage {that I made Sunday} and the Lemon-thyme “yogurt” sauce. I used fresh thyme for the sauce and had plenty left over- so I threw it in the dehydrator to dry it out. Kyle {my husband} loved these! He ate two!

Night time snacking gone good!

Ok- so here is the deal…my husband and I are night time snackers. Yes we have tried very hard not to snack but if we are watching a movie the urge is overwhelming. Sometime I make popcorn but even after that I know I didn’t make the best move for my body. I found a recipe for kale chips and tried them out. I did not love the recipe I used so I made my own- a concoction of the few recipes I tried out. These are so good and truly satisfy that salty craving. The best part is I don’t have that “I should’t have eaten that” feeling!


Ingredients:


One bunch kale {I use curley kale}

2 tablespoon olive oil

1 tablespoon Lemon Juice

Fresh crushed garlic {I use 3 cloves- LOVE garlic!}

1 tablespoon miso {whatever type you like}

Sea salt to your tasting.

Dash of cayenne

Directions:

  1. Remove kale from stalks
  2. Massage all ingredients into the kale. {This is my favorite part!}
  3. Let sit at least one hour.
  4. Put on dehydrator trays and dehydrate over night.
  5. Eat eat eat! These are very crunchy! You can even dip them in some vinegar!

I save the beautiful stalks and use for juicing the next day!

Raw Eggplant Pizza!

My first time making ‘eggplant’ pizza. I used up the rest of the Cashew cheese from our fajitas, some of the tabbouleh from last night and the pad thai sauce from Monday. How good it feels to use up all my food!

Raw Goji & Cacao Breakfast!

This is my breakfast. I have it almost everyday. In the mornings we wake up and juice. Then a little later I have my goji/cacao. About a handful of Goji berries and 5/6 cacao nuts. I love it! Then I have my homemade kombucha:} The Goji breakfast is satisfying and makes me feel good. My dad said to me when I was young, “When you eat something heavy for breakfast see how it makes you feel- then one day eat light or only fruit and see how you feel- then make a decision.”

He was right! Thanks dad:}

Portabella Garden

For Christmas Kyle {my husband} got me a ‘Portabella mushroom garden’ . We were both skeptical at first but turns out they grew beautifully and even better they tasted great on our raw portabella fajitas! Yummm! He got them from MushroomAdventures.com. I like how they grew – like a well choreographed dance :}
