Delicious Vegan Pizza

I know even if pizza is vegan it’s still not the healthiest food we can eat. It has some processed ingredients, but I really enjoy the process of making pizza and I love to eat it. So for now pizza is in:}


Ingredients:
Whole foods dough
Lots of garlic
Safflower oil
Pack of organic grape tomatoes or any kind of fresh tomato you like.
Salt to taste
Daiya mozzarella cheese {Link for Daiya at bottom of this post}
Any topping you would like, I used mushrooms.


Chop garlic and saute with safflower oil or other high heat oil on low for a few minutes. Keep an eye on it garlic can burn. Stir often and happily:}



Add fresh tomatoes then use a crusher to mash them up.



Add salt.



After the tomatoes have stewed a while take them out and vita mix it up to a puree. Add puree back to pot and let simmer for 20 min or longer. Stir sauce. If you really want to do it right stir clock wise like my grandma did.



While the sauce is cooking you can make the dough a circle or whatever shape you want. The dough should be siting out about 20/30 minutes before you can work with it. Top with sauce, daiya cheese and mushrooms. Cook for whatever dough directions say and cheese is melted. Daiya cheese is amazing. I grew up with cheese and I never thought anything could compare to mozzarella on pizza but this wins.

Homemade peanut butter with no artificial anythings!

This was super easy and so good. All I did was buy organic roasted peanuts, celtic sea salt and vita mix them up! My husband made a second batch and added safflower oil {recipe said peanut oil but we didn’t have that}.
I liked his better than mine with no oil added. Either way well worth it:}





Spaghetti Squash Dinner

Spaghetti squash is a great alternative to pasta. It was an experiment that I am quite happy with:}


First cut the squash in half and scoop out the seeds. Then place face down on backing dish- 350 for 30 min.



Then cut up your veggies I used:
1. 4 cloves of Garlic
2. Half red onion
3. Half red bell pepper
4. A few grape tomatoes
5. One bunch of maitake mushrooms
6. Handful of baby spinach





Lightly cook the garlic and onion in cooking wine and shoyu. Then add the other veggies, spinach last.


Lastly scoop out the squash, which separates like spaghetti, and top with veggies. This dish could be substituted for a hearty pasta dish. It is very filling. Also add any veggies you would like:}

Pasta Substitute

Zucchini is a great pasta substitute. You can put any of your favorite sauces on top of it like you would any pasta dish. Your favorite pesto recipe, sauteed veggies, Raw Alfredo sauce, marinara sauce… SO many possibilities!


This dish is raw spiral sliced zucchini with Kyle’s delicious cooked tomato sauce. It was fantastic!

Mock Chicken Salad and dessert!

On our menu last night was a recipe for mock chicken salad. I did my own variation and it was delicious! Not totally raw but I did feel good and not weighed down.





My variation:
Ingredients:
3 cups sprouted garbanzo beans {chick peas}
Half of a small onion {red or yellow} Chopped
Half or whole carrot Chopped
1 Red bell pepper chopped
Vegan Mayo


Directions:
Put garbanzo beans, onion and carrot in food processor and pulse until you have a nice texture. {not mush}. Transfer to a mixing bowl. Add chopped red pepper. Mix in vegan mayo as much or as little as you like. This is SO good! I had it with raw cabbage salad and some cucumbers:}
